I have the data sets with temperatures and ozone concentration, but I'm not sure how I would write the code to show the relationship between these two variables.

A good place to start is to see if there is a linear relationship by running a linear regression . You can refer to the following information which gives more details about the syntax and provides additional background information: https://www.mathworks.com/help/matlab/data_analysis/linear-regression.html.
Depending upon the results of the regression, and other factors like size of the data set ,complexity of the model you are looking for you can think about trying more complex models non-linear models as well using our curve fitting toolbox : https://www.mathworks.com/products/curvefitting.html.
