I'm using Matlab and I do have a gridded data (0.5 degree) of India for drought index SPEI stored in .mat file with size (62,63), and I have plotted using imagesc() function. However, I want to display it into a map with longitude and latitude axes to be like the map attached.

Use the 'xdata' and 'ydata' inputs to imshow() to have the tick marks be what you want. You can also use xticklabels() and yticklabels().
