As part of a university report, I am using MATLAB to format the graphs of the experimental data. I've done this by importing the data to workspace and plotting a scatter graph. I would like to reformat the x-axis of the graph to be as shown in the attachment, so that the axis is in the order of powers of 10s. How can this be achieved?

Use xlabel :
xlabel('Capacitance')
Refer xlabel documentation for more details,

For this question, I am referring to the incrementation used the the x-axis. Do you know how I can adjust the axis, so that it is in the order of 10s?

To plot the x-axis in powers of 10, use the semilogx function. (There are other options as well to produce teh same effect. This is the easiest way to do it.)
