How i read for exemple 10 in 10 frames of a video in matlab?

You can use:
nframes = fileinfo.NumFrames;
i = 1:10:nframes

Note: if the video is stored with variable frame rate, then you will have to read to the end of the video file first before you can determine how many frames were present.
