Finding the contour based on the colour of the image

Hi... I am new in matlab for processing image, however i did, OCR for both single and whole word of the english language, now i have interest to find the contour of an image based on its colour, suppose i have a map where each region is differentiated based on the area colour, i want to recognize each portion/area of the map, i have some theoretical idea about the image colour space, however have no idea about how to do it practically. Hope to get some assist regrading this issue.
