Mid stream video stream slider change

I'm streaming data from a camera. I'd like to create a slider that will allow me to dynamically vary the threshold and to display the resulting video. Currently i'm stopping the video stream, taking the last image, using a slider to set the threshold, and then restarting the stream. I'd like to be able to do this continually while watching the processed stream to see how well this working.

Nandini - see http://www.mathworks.com/matlabcentral/answers/153278-discretizing-matlab-slider-gui for an example of assigning a ContinuousValueChange callback to the slider which, when fired, you could do something that would change the threshold. Try implementing something similar to that to see if it will do what you want.
