Using Parallel Computing for GUI Functionality?

Hello everyone! I am writing a single GUI that controls a set of actuators. However, I would also like to incorporate real-time data from a power meter into the same GUI. Since callbacks are interruption based, I was thinking the best way to ensure all power-meter data was collected in real time was by using parallel computing, communicating with the actuator control on one thread and the power meter on another.
My only ideas so far have concerned using the timer in conjuction with the parallel computing toolbox and utilizing explicit multithreading of processes (using the "batch" Matlab method). I am having issues getting either method to display a real-time graph of power in the GUI, though. I realize this may be an insurmountable barrier due to the nature of communication between threads, but does anyone happen to have ideas about or experience doing this kind of thing? I would very much appreciate any input anyone could offer. Thanks everyone!
