How to create data set in neural networks for matlab2013a?

We have to submit a project on character recognition using neural networks in matlab. we have read references and youtube videos for the same but we are not able to find the steps for creating the required input data set. If anyone knows about this project then kindly help us sort this out. Also, please guide us for creating the GUI. Thank you.
