How to acquire and process real time signals in MATLAB ?

Please be more descriptive about the procedure ! I am aware of the fact that it can be acquired through SIMULINK but I am not sure which blockset to use.

Are these video or audio signals? You can actually stream video and audio data into MATLAB using System objects. System objects are available in a number of toolboxes, DSP System Toolbox and Computer Vision Toolbox are two such examples.
