Is it possible to analyze my data in my plot window (with my mouse cursor to get some specific values) like in this link? -> https://plot.ly/matlab/scatter/

No, that kind of split information updating (x information is shown at X axis, y information is shown at relevant point) is not supported in MATLAB. There is probably a way it could be programmed, but it would not be trivial.
