How to convert pixel dimension to mm

Good Day! I successfully stacked a 3D image using matlab with the dimension of 381*365*100 pixel.I would like to ask that how can I convert it to 40mm*38mm*100mm* dimension without loosing my resolution? I tried with the imresize () command but i lost my image quality.Hope someone can clear my doubt.Thank you.
