I have a table that is approximately 85000x10. The first column is Date and Time, I want to plot the other columns against the first I am just not sure which Output type I should import the columns as.

"I have a table" I assume that's a text file

I recommend using readtable(), especially if you use detectImportOptions() with it. readtable() will probably be able to convert the data and time to datetime objects and duration objects; you can add the two in order to get a datetime that includes date and time of day.
