I want to interpolate a matrix "A" containing 3633 rows and 3506 columns with many scattered NaNs to another matrix "B" containing 10900 rows and 10521 columns. How can I do it ?

If you want to go ahead with NaN's itself...use intepr2, imresize.
If you want to fill NaN's first, then use fillmissing and then interp2, imresize.
Read about interp2, imresize, fillmissing.
