If yes, then how?

When you say "data" do you mean content transmitted as the payload over wireless? Or do you want to be able to get at the full data packet including headers? Or do you need to be able to get at some kind of digitized form of the spread spectrum signal itself?

I am not currently aware of any Wireless card that allows the spectrum itself to be read.
Please keep in mind that the base carrier for common wireless is 2.4 Gigahertz. That is only slightly below the clock rate of the Intel i7 processor on my computer. There is no way it would be practical to process 2.4 Ghz spectra on any machine that MATLAB is supported on, or at least not in "real time".
You could in theory have a data acquisition device that buffered the information for a period of time and then transferred it to MATLAB for much slower processing.
If you look at the National Instruments data acquisition boards, you will not find any that are even as high as 1 gigasample per second (1 GHz)
