If I write a program for AES algorithm in matlab , How to test it against hackers and how I discovered how much is needed from time to break the algorithm I hope you help me?

As I have indicates before, we cannot discuss AES code here, for legal reasons.
Also, the theory and mathematics of breaking strong cryptography algorithms is difficult, and not suited for discussion in a forum devoted to a computer language. You should consult resources for cryptography, such as textbooks or the Usenet Newsgroup sci.crypt
