Surf: colorbar such that 0 is always the same color

Hello everyone,

I have to draw a surface on which I should be able to easily locate the points where it takes the value zero. The function takes both positive and negative values and I'd like to set 0 as a reference value for which the color would be always, say, yellow, even when the function to plot is changed.

Do you think that's possible?
