HUE value of Image, Image Processing in Matlab, RGB to HSV

I am trying to use the concept of Liquid crystal thermography to measure temp distribution on a surface. In which i get a RGB image of liquid crystla from a color camera which describes the temp distribution on that surface.
I am new to image processing and I was wondering if any one can help me out how to get details of RGB at every pexel which can be directly linked with the temp at that point by calibrating equation.
One method is using hue angle. If any one can tell me how to get hue value from an image in matlab it would be really helpful.

Use rgb2hsv() . The hue component that results will be in the range 0 to 1, representing fraction of a full circle. To convert to a hue angle, multiply by 360 to get degrees or multiply by 2*pi to get radians.
