Can you create Figures that can be embedded in a document and then edited by non-Matlab users?

We use a plotting software package (PRISM) to create figures that are then placed in Microsoft Word documents. A non-matlab person can then click on the figure in the document and do some basic editing (ex. add or move a horizontal or vertical line, add test, change titles etc.).
I'd greatly perfer to generate my figures in Matlab and then put them in the document. But at that point the figure is static and can't be edited. I don't think there's any ability to do this from Matlab but figured I'd ask. Thanks for any feedback.

Save as EPS, which is a commonly-used vectors graphic format. You can easily edit EPS files using vector graphics applications, e.g. Inkscape. MATLAB supports quite a few vectors formats, e.g.:
