Setting plot zoom mode?

If you right click on a plot and go to zoom mode, it is defaulted to unconstrained zoom, with horizontal and vertical as choices. Is there any way to change this default?

You can set the behavior through the zoom command. See the help. For example, to zoom just in the horizontal direction.
plot(randn(100,1));
h = zoom;
set(h,'Motion','horizontal','Enable','on');

Of for a specific axes:
setAxesZoomMotion(ZoomH, AxesH, 'horizontal')
