During setup, I select products to install. When I remove simulink, it tells me that there are products which depend on it and if I'd like to add it. I want the other way around: remove all products depending on simulink.
Looks like an obvious thing considering package managers such as pip and apt.

Your needs are very strange. In general, we need to install as few toolboxes as we need, i.e., only those toolboxes and their dependencies that are necessary to meet our needs. And from your description, it seems like you're looking to install as many toolboxes as possible, but just excluding Simulink that you somehow hate. You don't seem to know what you really need.
In any case, the advice I can give you is that toolboxes that contain the prefix "Sim-" are most likely dependent on Simulink.

I tried to pick packages in the past, but I was always missing some and needed to go back and install more. Moreover, searcing and ticking off a list is a bother. So, I just install all matlab-related. On the other hand, I never use simulink, and it's on the top of the list.

You may be working in a very wide range of fields. It's hard for me to imagine a person using more than 10 toolboxes at the same time.
