can we use multiple user-defined functions block (like s-function level 1, level 2, embedded matlab function) in one simulink model? will it degrade any performance (maybe in this case i am using s-function to describe my process model and then i am using the embedded matlab function as the estimator)?

There is no limitation regarding the number of user-defined function blocks in a model. The performance depends on how well the function is written.

between those 3 types, is there any differences in terms of speed of simulation?
