Hi, I am plotting a matrix but I don't want the legend to divide the label into the different columns instead just one "legend" per matrix. Is this possible?

What exactly does "plotting a matrix" mean? As lines, as image, as PATCH or SURFACE object?
What does "one legend per matrix" exactly mean?

I don't understand your question, but I am going to take a guess. Is this what you mean? Notice that I plotted four lines, but only have a legend on two of them.
h = plot(rand(5,4),'.-')
legend([h(1) h(3)],{'First line','Third line'})
