ver
Just type "ver" in the MATLAB command window. It will show you what version of MATLAB you are running, your license number, and what toolboxes you have installed.

Todd noted "ver". That will tell you about installed toolboxes, not about licensed toolboxes. The easiest way to determine which toolboxes you have licensed is to visit https://www.mathworks.com/licensecenter and click on your license number, and then the tab License Details (the one shown by default) lists all of the toolboxes you are licensed for.
You can also examine your license file. For the location of those, see http://www.mathworks.com/matlabcentral/answers/99147-where-are-the-license-files-for-matlab-located .
With the more recent versions of MATLAB (R2014a onwards) sometimes it is easiest to drop into the MATLAB installer, which will connect to the Mathworks and bring back the list of licensed products in order to populate the list of things you might want to install.

Note that this was added in R2017a if I recall correctly; certainly not older than R2016b.
