how do I make intel compiler default for mex

I've just installed the Intel Fortran compiler, but I can't seem to get mex to recognize it. I've tried all of the usual ways I've used in the past including changing the defaults in the mexopts.sh file. For whatever reason, Matlab insists on looking for the gfortran compiler. I can't seem to find anything online describing how to reset the default. And yes, I also ran "mex -setup".
Some details: running Matlab 2016a, Macbook Air running El Capitan, 10.11.5, Intel ifort 16.0.3
