Control baseline conditions for mixed effects model?

I'm fitting a generalized linear mixed-effects statistical model to my data using fitglme(). Is there a way to see (or even set) which conditions in the model correspond to the baseline/intercept? For categorical predictors, its easy to infer this info from the resulting table, but not for continuous variables.
