I would search through Simon Haykin’s books for one that meets your needs. It’s general theory and not specifically oriented to MATLAB, but they were considered the best when I was learning about neural nets.

My pleasure.
Haykin was my introduction to neural nets (used as a textbook for all the neural net courses), and was clear enough to allow me to design my own in FORTRAN 20+ years ago.
The newest version is Neural Networks and Learning Machines (2009).
