After running a script the product is three separately named 1x1 cells that open to 77x1 doubles, when loading it how do I skip the cell and go to the matrix immediately for all three variables? I am trying to keep the file name the same just convert the cells to doubles so I can open them and combine with other doubles.

See if this does what you want:
C{1} = rand(77,1); % Create Data
C{2} = rand(77,1); % Create Data
C{3} = rand(77,1); % Create Data
A = cell2mat(C); % Matrix Output
