What is the triangular block symbol in this model?

Hi,

I can't find either of the triangular symbols on MATLAB. They don't seem to be GAIN blocks?

It looks like a logical operator. You need to check the Logical Operator block for that purpose.

Apologies if I'm asking stupid questions, I'm very new to this software. I have checked the logical operator block however it doesn't allow a triangular shape? There are two different ones in the picture I attached, one triangular block with 2 inputs and another one input traingular block with a small circle.

Well, the triangular shape does not have anything to do with its function. It is just a representation, that is all. That small circle triangle shape might be a NOT operator. These are just guesses by the way. I can not say something for certain unless I know what that circuit does. Just use that logical operator block and form this structure in Simulink and see for yourself.
