How to increase data captured by scope, real time motor control

Hi,
using a single motor with the code. while running the motor there is a delay when adjusting the desired speed attached below. The delay occours when the scope is added to measure the estimated speed, but becomes more responsive to speed adjustments after about 1 minute of operation. Along with this the scope data received is only the last 5-10 data points (depending on the duration selected in the settings: code/external mode control panel/ signal and triggering )captured so it is difficult to plot the response of the motor with changes in speed. The scope settings have sampling time of 0.01s. Attached also is the setting for the signal and triggering settings as well as the scope settings.
Any help would be much apperciated,

You can try the above example as it uses two CPU for two motors connected back-to-back.
You can use this as starting point as it works real time.
