Applying simulated annealing algorithm to scatteredInterpolant data

Hi everyone,
We had the task to apply the simulated annealing algorithm (as code, not as function) to the Himmelblau function.
In a second step I would like to apply this already existing code to a scatteredInterpolant data set. This means, I do no longer have an explicit function in x & y, but a matrix constisting of x, y and z values. I just had an introduction into Matlab and therefore I am not familiar with coding at all - the task was quite challenging for me so far and now I am stuck. I would highly appreciate some tips or a few coding lines which could help me applying the already existing algorithm to the new problem. I am sure it is not a big deal but in this field I simply have a lack of experience.
