Currently, I had an signal file from SETI with fits format. I can read it using fitsread, but I can't figure it out how can I plot the signal from it.

Could you show us the fits-header?

I attach the header here. The data dimensions it self is 4608x2080 double, I attach the examples of data too.

To read data in fits-format you can use fitsread and fitsinfo, but when I try that on an image from SETI-projects web-site I got some unfortunate bungling of bit-order. Once uppon a time before matlab introduced fitsread I had to manage fits-image data, where we unfortunately managed to mess up that too. You can use either fits1 or fits2 to read your images one works for least significant bit first the other the other order. Just put the files in one of your directories on the matlab-path. No image processing, background-reduction or calibration-correction is done.
