How to plot a 3D Histogram

I have a series of ordered pairs (X, Y) and I want to plot a 3D histogram but I don't know Z, their probabilities. any suggestions?

You probably want 2D histogram which is visualized in 3D. You should be looking at the HIST3 function, look through this doc and let us know if this is what you want:

What are you counting? Are X and Y integers? Do you want to know the number of times each X and Y occur together as a pair? This would be a 2D histogram, though you could plot the bars in a perspective graph that looks 3D-ish where the bars rise above the flat x-y plane.
