How can I bring 5 variable at 5 different axis angles and plot the correlation coefficient with respect to a base variable.

MATLAB does not have built-in spider plot, AFAIK. The nearest built-in is polarhistogram().
By the way, there are spider plot functions available in the File Exchange.
