I have Radar motion data. There are two columns time and amplitude. Can someone help, how to find spectrogram of raw signal using STFT. For the reference I am uploading a sample image, what I exactly need.

Use the pspectrum function with the 'spectrogram' option.

can you please help me with code. Let x be the data matrix containing two columns, 1st column represents time and 2nd column represents amplitude of the radar signal.

The documentation explains it better than I can.
Prototype code would be:
pspectrum(2nd_column, 1st_column, 'spectrogram')
or:
[p,f,t] = pspectrum(2nd_column, 1st_column, 'spectrogram');
Beyond that, you will have to experiment with your data to get the result you want. See the documentation for details.
