Plotting multiple data sets

Hello,

 I do not know how to plot multiple data sets on the same graph.  I've included an image to demonstrate what I would like to do (lower left).  Is there a way I can display my data as a 2D data set similar to the image I have provided?

This looks like a waterfall.

Waterfall will not allow me to select all of my data points. I have 27 1024x1 columns I'd like to plot. Thanks for the quick response.
