As per my understanding, you are unable to uninstall MATLAB R2021b due to ‘The system cannot find the file specified’ error.
In order to solve this problem, you will have to manually run the ‘update installer’ from the MATLAB installation folder by taking the following steps:
  1. Reboot the system
  2. Run the ‘update_installer.exe’ located at the MATLAB install directory: ‘C:\Program Files\MATLAB\R2021b\bin\win64’.
  3. Uninstall MATLAB R2021b.
This will solve the uninstall issue. However, if the issue persists, manually delete the MATLAB installation folder, and remove MATLAB entries by following the steps mentioned in
I hope this resolves the issue.
