I am relatively new to matlab. I have created a three-dimensional matrix of ones an zeros and I would like to find a way of converting this into a 3d image with the ones being solid voxels and the zeros being empty voxels. Any help would be much appreciated thanks :)

It's already like that, so you're done. Just consider 1 solid and 0 empty. Nothing else to do.

Sounds like you want to visualize a 3-d array in the same way that image() lets you visualize 2-d arrays.
I did, and ended up writing image3() that can be found at fileexchange: http://www.mathworks.com/matlabcentral/fileexchange/30721-image3
