I obtained a MATLAB Compiler-generated executable from another customer, but I do not know which version of the Compiler was used to create it.

Unzip the compiled application and refer to information in file <app folder>/metadata/mwcorePropertiesReleaseInfo.xml.
For example, on Windows you can use 7-zip tool. MathWorks doesn't provide support for 7-zip.
Other deployable targets such as libraries generated with MATLAB Compiler SDK can also be unzipped. Search for mwcorePropertiesReleaseInfo.xml file for release info.
